Walnut and mocha cupcakes

For the cupcakes:

1 cup butter, softened
1 cup superfine sugar
2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
4 eggs
1 tsp vanilla
1/2 cup chopped walnuts

1. Combine all ingredients except walnuts in a bowl and beat with an electric mixer until smooth and pale, about 5 minutes on high. Stir in walnuts.
2. Bake for about 15 minutes at 170 C.

For frosting:

1 cup butter, softened
3 cups icing sugar, sifted (nt necessary to use all)
1 tbsp instant coffee granules (i used nescafe)
1 tsp hot coffee
1 tsp vanilla extract

Beat butter and icing sugar until soft and creamy. Combine coffee granules and hot coffee and then stir into the batter. Stir in vanilla. Add milk or cream if frosting is too stiff. Pipe swirls onto cupcakes, and decorate with a mocha bean.

    Hi! Is your measurement of 1 cup of butter equivalent to a block of butter (250g) ?? All your cupcakes look very pretty! 🙂

    Thanks! 1 cup of butter = 227g. Hope it helps!
