Chocolate Maltesers cupcakes

December 14, 2008

Yet another chocolate cupcake!

I know the title said Chocolate Maltesers cupcakes, but the only Maltesers present were those round balls as decor. None in the cupcakes though! I feel that they could have tasted maltier.. I don’t know. People told me they could taste the Horlicks-y taste, but I really couldn’t. Oh well. But I really love the frosting!

Gosh I need a better camera, or photoshop skills OR somebody to take pictures of the food.. Anybody up for it?

Recipe from here, but I tweaked it, as usual.

150g soft brown sugar
100g caster sugar
3 eggs
175ml milk
150g unsalted butter
3 tablespoons Horlicks powder
175g + 2 tbsp self raising flour
25g cocoa powder

1. Whisk together the sugars and eggs until light and frothy.
2. Heat the milk, butter and 2 tbsp Horlicks powder in a small saucepan until the butter has melted and the mixture is hot but not boiling.
3. Beat the milk mixture into the eggs a little at a time.
4. Mix the dry ingredients (flour, cocoa and horlicks) together and sieve them into the mixture mixing carefully but thoroughly. Spoon the batter into baking cups filling them no more than 2/3 full.
5. Bake at 170°C for about 15 mins. Let cool.

The cupcakes will rise higher than normal ones for some reason I don’t know.. Which is great actually. SO I don’t have to use so much frosting for the domed effect.

220g icing sugar
1 teaspoon cocoa powder
45g Horlicks
125g soft unsalted butter
2 tablespoons boiling water
Maltesers for decoration
1. Mix together the icing sugar, cocoa and Horlicks carefully.
2. Add the butter and mix again. Pour the boiling water in mixing all the time until you have a smooth buttercream.
3. Spread over the cupcakes and decorate with Maltesers.

There you go!

Maybe next time I shall try with crushed maltesers in the cake batter, and see how they taste like!
