Devil’s food cupcakes with chocolate buttercream

It’s chocolate on chocolate. What’s not to like?!

Note: I can’t really remember what chocolate I put on top of the buttercream frosting! But I guess you can use anything.

Devil’s food cupcakes

2 cups self-rising flour
1 tsp baking powder
1 cup light brown sugar
1 cup (227g) butter, softened
2 separated eggs
1 cup semisweet chocolate, melted
1 tsp vanilla extract
1/2 cup milk

1) Preheat oven to 170 deg Celcius. Sift the flour and baking powder and set aside. In a medium bowl, cream the sugar and butter. Add the egg yolks and beat well. Add the melted chocolate and vanilla, mixing well. Add the flour and milk alternately, beating well with each addition. Beat the egg whites in a separate bowl until soft peaks are formed, and gently fold them into the batter (using metal spoon).
2) Spoon the batter into the cups. Bake for 20 mins.
3) Remove pans from the oven and cool for 5 mins. Then remove the cupcakes and cool on a rack.

Chocolate buttercream

1/2 cup butter, softened
3 tbsp chocolate malt milk
1 cup semi sweet chocolate, melted
1 tsp vanilla extract
3/4 cups icing sugar, sifted

1) Cream the butter in a medium bowl.
2) Beat in milk until smooth. Stir in the chocolate and vanilla.
3) Beat in the confectioners’ sugar until thick and creamy.

4) Top off with chocolate (ANYTHING WILL DO!)
